Hi all.

Been a while since I brewed and had a couple of days off in a row so had a pint at this.... As the name suggests it was a bit on the fly.

I heated 56 liters of water with 6kg of lme and 1kg of dme. Once it got going 12g of warrior went in the bitter to 14ibus.
Mini mash with 1.5kg oats and 500g of maris otter and 6 liters of water. Glucan rest at 45ish degrees then heated to 66 and 250 cara gold went in. After an hour mashing that was drained and added to the main body.
Boiled for an hour (furiously as og was too low).

This was then drained into 2 no chill cubes for cooling. Hops to be added once the wort has cooled down a bit.

So after about 4 hours cooling I added 30g of citra and mosaic to one cube (cube 2) and 70g of citra and mosaic to the other cube (cube 1).
Cube one is going to be (hopefully) a full on hoppy neipa. I'm going to dose it with a few more rounds of dry hops during the ferment.
Cube two will be less hoppy and have added Earl Grey tea as this always works well.
It's all going to be fermented with us 05.

The cubes were put into their own fvs with us 05 and some clarity ferm to make it low gluten yesterday.

Today im putting 33g of citra and mosaic into cube 1.
(im gonna need to buy some more hops for the dry hopping that's going to happen!)

I've added 3 lots of 33g of both citra and mosaic spaced a few days apart into cube 1 during the ferment. Cube 2 got nothing.... Yet!

I'm going to dry hop both cubes 60g of both citra and mosaic in cubes 1. 40g of both and a load of Earl grey tea leaves (100g?) in cube 2.
