Cider from eating apples only

I've about 50kg of various heritage apples, starting to go wrinkled and needing using. I know cider ideally is a mix of eating, cooking and crab apples but when people do turbo cider they seem to just throw in some tea... This adds tannins in lieu of crab apples but what about the missing cooking apples?
Are these less important or should I add something... Say lemon juice... To bump the acidity?

Do you know the actual varieties? Have a wander round - the book version has some advice on mixing varieties
