What to do with some sour cherries?

Postby Rolfster » Sat Jul 28, 2018 13:43

Hi all

I've got some sour cherries I've harvested from a tree in my back garden. They are not nice to eat! I've previously made a cherry and berry wine with them. It turned out ok but no one drinks my wine so there seems little point in doing that again!

Anyone got any ideas on what to make with them?
I don't want to make a dark beer with them, but other than that I'm interested in any ideas.
The only thing I can think of is a sour cherry (turbo) cider. Not a sweet alcopop thing but a tart cider.

Any ideas great fully received!
Cheers Tim

I once made a morello cherry wheat beer. It was rather nice. I had to go to the supermarket over a period of a month to buy enough frozen ones!

Pale/lager malt 2. 3kg
Wheat malt 2.2kg
Challenger 22g 7%AA 90min
4 kg cherries in when starting the cooling
20g pectolase in the fermenter.

Aprrox 36litres of liquor

I used whitelabs 400.

OG 1062
FG 1015

An interesting idea.

I think the cherries are basically not very nice! Sour and bitter. Due to this its going to be a bit of a gamble if it's drinkable or not.
I need to taste the wine I made first but I seem to remember it had a really odd and slightly unpleasant after taste. Due to this I don't want to put too much work in to making anything!

I think I'm going to make a port type thing with them.
