I've just picked a few sloes and was about to have a stab at sloe gin but thought I'd ask the advice of you knowledgeable people instead of following a random recipe.

So, starting at the start, how does one prepare the sloes? I was going to wash them, pull all the remaining stalks out, freeze, mash and then cover with gin. Then sugar to taste a few months later.

What sloe to gin recipe do you use?

about that yeah. my mum puts too much sugar in, I'd prefer it pretty dry.

Fresh sloes: ring cut around the sloe and drop into a demi cover with chosen alcohol - gin, vodka and white rum work well.
Leave for 1 month, then pour liquid off the sloes, add 1kg sugar. shake daily for a few weeks until absorbed. Taste, if too dry add sugar too sweet add more booze :D

Frozen sloes: allow to defrost, press gently with a spud masher and put into demi, follow method for fresh.

The recipe I've used for damsons, which will work for sloes, is 450g damsons, 165g sugar and 70cl gin. If using vodka halve the amount of sugar. Wash and prick the fruit with a fork, put into kilner jar with sugar and gin. shake every day until sugar dissolved. Have a taste after 3 months and adjust sugar if you want. Some strain off the fruit some don't. I've left it a year before straining. Then don't throw the sloes away but add them to a bottle of sherry in a kilner jar with a tablespoon of sugar. Shake each day for a week, store for 3-6 weeks, strain and drink.

I usually freeze mine as that splits the sloe. I usually don't bother mashing, just chuck in a jar pour on the gin/whisky and add sugar. Then turn for a few days till dissolved and leave for a few months. They do say to leave for 12 months and the fruit turns brown, but I've never lasted that long.

We had some stock, so last year's lot is still in the jar!
We've more or less given up adding sugar to rassy vodka, bramble rum, or sloe gin, as we always use a sweet mixer (often cream soda)

wot ive been doing..

get 2 empty spirit bottles, fill each with 1/2 a bottle of your white spirit of choice, fill em both with sloes pricking with a fork a few times as u drop each sloe in, fill upto the neck with all sloes submerged.

after a month or 2 as christmass parties get underway, decant off the sloes and sweeten, 4-6 table spoons of sugar to start with, add more if your tooth is sweeter.

Never had any trouble with 1L Gin in a 4.5L demi john here. shake it and your DJ is sterile again.

Does anyone gave a good alternative to gin? I have a batch of sloe gin on the go and a load pof sloes still in the freezer.

I've seen a few people suggest vodka, anyone done anything else?

My recipe is simple: one third of a bottle (ish) of sloes, roughly one third of sugar and then fill up with gin. We prick the sloes with a cocktail stick a few times as it creates less muck than freezing them, and although it's time consuming, it's kind of fun (your fingers go brown). We usually do this in Sept/Oct and then filter through a coffee filter and drink at Christmas, but the longer you can leave it the better. We did it with damsons this year as there were no sloes around, but bullace also work really well (sized between sloes and damsons). You can use vodka instead of gin. I prefer sloe gin mixed with sparkling water and ice as a long drink in the summer rather than sipping it as a liqueur in winter. Basically you can't go too wrong and you can filter it if it's cloudy

We used to put sugar in all these things, but no longer bother as we virtually always use a sweet mixer with them (often cream soda)
