800 ml of starter made with 140 g of malt extract for a 60 l batch. Used a pack of Mangrove Jack brown ale yeast which itself should do for 25 litres, so should really have been ample for 60 l.

Barrel mine tonight in 2 sanke kegs. I'll force carb at 30 psi for 2 mins and let them sit for a week at 12 deg c. I find this gives them that 'cask ale' carbonation and slight 'prickle' on the tongue. Served with a hand pump and a breather.

I am no professional taster, but I do know nice beer. I get nice coffee and choc with a good bit of malt. Nice sweetness balanced by the hops.

The irish ale yeast sinks like a stone and compacts well.

This beer is hoofin! Deffo one of my favourites so far. It will be brewed again and again with no adjustment to the recipe. Its been over 3 weeks in the keg and is super smooth!

Bad 'Ed - no it didn't attenuate further- just stayed at that for several days despite raising the temperature to 20 degs C. I think I mashed at 68, can't quite remember now. I primed with only 1g of sugar per litre, after 2 weeks in the warm it's got a nice head. I haven't tasted it for 10 days or so as I never drink in January ( been doing this for 20 yrs now). I'll open another bottle in February and report. Kyle : there's one on the way to you.

Well, had this beer a little while back, came down pretty lively and the sediment lifted when I opened the bottle but 3/4 was lovely and clear, dark brown and dark red when held up to the light, took a while for the aroma to come through the CO2 but it was a soft, lightly roasted but all malt affair.

Flavour was predominantly caramel and chocolate, a bitterness lingered on the front of the tongue and the roast formed the aftertaste, if I were to rebrew this I'd up the roast and lower the chocolate/caramel mix slightly, possibly decrease the bitterness, but overall a very nice beer.

Kyle, Thanks for that.
I agree it is a bit over carbonated - I added the tiniest amount of priming sugar in view of the FG- which just would not go below 1018.
I think it's best left for 5 minutes or so to allow some of the C02 to escape.
I agree with the bitterness too - but this will reduce as time goes on, so it'll hopefully become a bit more rounded.
