Fermenting Hot Sauce

Just came across THIS How To - As somebody who is hooked on hot sauce I'm keen to try this but thought I'd share on this appropriate forum.

Has anybody tried something similar? How did it go?

Not tried that but defo gonna have a go at this. I love really hot sauce and am usually disappointed by the stuff I buy in the shops. If my face doesn't turn red and I lose the ability to speak then its not hot sauce in my book :)

So its Scotch bonnets and Habaneros all the way then. I seem to recall there is a new(ish) pepper been developed in the UK that comes out around 3M on the Scoville scale.

I've always loved hot food, however, when I was in Bangkok (with the wife) I felt a clear and definite need to keep the toilet paper in the Fridge.

Yep that's it, reckon a trip to an Asian supermarket is in order. They always have chilli's going cheap :)

This does sound like an interesting alternative to chilli jam.

I had no idea hot sauce was fermented!

I've got a bottle in the fridge called fecking Hot Sauce. And yes, it is.
