Anyone using this method would be advised to always put the lid onto the pan while the bottles are in the hot water. It may even be a good idea to weigh the lid down, just in case one of the bottles or caps does break.

rob, could you explain what the difference 'aging' and 'maturing' is? guess i always had them down as interchanegable words for the same thing. cheers

I would consider them the same thing, jaroporter. I've learned since writing this that killing the yeast can also start the staling process of a beer, so probably wise to avoid pasteurizing unless you need to.
