Afternoon.

I was going to brew a basic bitter but when brewing yesterday I found I have a chronic shortage of English hops that I need but an abundance of American hops.

This will be my most ambitious beer yet in terms of mash profile, hop schedule, container selection and water.

I am going to try a 60/40 mix of tap water and Ashbeck to see what difference that makes, I have ordered some NBS West Coast yeast as I have no American yeast at all and loathe to pay £6 odd for a single use vial.

Here's the recipe:

AG#28 (BM#2):

Name: Cask Hopper.
Length: 23 litres.
OG: 1.050
FG: 1.012
ABV: 5.0%
IBU: 40
EBC: 16

Mash:

Step 1: 55c @ 5 minutes.
Step 2: 63c @ 40 minutes.
Step 3: 70c @ 50 minutes.
Step 4: 75c @ 15 minutes.

Boil: 60 minutes.

Grist:

4.6kg Maris Otter (92%)
0.15kg Caramalt (3%)
0.15kg Crystal Rye (3%)
0.10kg Aromatic (2%)

Hops:

10g Centennial Leaf 9.3% AA @ 30 minutes.
10g Chinook Leaf 13.4% AA @ 30 minutes.
15g Centennial Leaf 9.3% AA @ 15 minutes.
15g Chinook Leaf 13.4% AA @ 15 minutes.
20g Centennial Leaf 9.3% AA @ 5 minutes.
20g Chinook Leaf 13.4% AA @ 5 minutes.
20g Citra Leaf 14% AA @ 5 minutes.
10g Centennial Leaf 9.3% AA @ Flameout.
10g Chinook Leaf 13.4% AA @ Flameout.
10g Citra Leaf 14% AA @ Flameout.
10g Centennial Leaf 9.3% AA @ Cask (Dry Hop).
10g Chinook Leaf 13.4% AA @ Cask (Dry Hop).
10g Citra Leaf 14% AA @ Cask (Dry Hop).

Boil Additions:

3.0g Irish Moss @ 15 minutes.

Yeast:

NBS West Coast Ale Yeast @ 20c.

I will fire it through the laptop software whilst waiting for the yeast to arrive, as always, input is appreciated.

Wow, that's some hop schedule! looks like it has potential to be a great beer!

Galaxy Pale Ale, Woodfordes Wherry, Bella Brew Pale Ale, Strawberry and vanilla Pale Ale, Mixed fruits cider, Elderflower and grapefruit fizz.

Maturing:
Rhubarb Wine, WOW rose', Elderberry wine, Mixed berries wine, Elderflower and grapefruit wine, Elderberry wine.

Next Up:
German Pilsner, Guinness Clone, Chateau De Roi selection kit, Strawberry and lime cider.

I'm happy to send you one for evaluation when it's done. I've opted for the 'little and often' approach all within the last 30 minutes of the boil.

It could turn out an utter disaster! It is a lighter variation on my Secret Santa swap from last year.

the west coast yeast is a good choice. When we grow the san diego super yeast ill send you some to see what you think.

After 2 months here it is:

After adding 100g of dry hop to the cask it's almost like drinking fresh tropical fruit juice. Perfick for a hot day like today, finished at 5.9%
