Raspberry Saison Recipe Wanted

I'm doing some brews for a friend's wedding and they've asked for a Raspberry Saison.

Does anyone have a recipe for Raspberry Saison I could use?

Does anyone have a source for Raspberry extract?

A few kilo of frozen raspberries added to secondary in a basic saison should do it! Pale malt, good saison yeast, 25 ibu.

Adding raspberries will make it thinner and quite sour of course, and Saison is already quite a dry, thin bodied beer. Mashing a little higher than usual for a Saison might make it easier drinking for those that don't particularly like sours. I think Pittsy has a recipe along those lines. On the other hand, if they like sour beers then ignore .........

Thanks guys for the quick responses.

I've got a basic saison recipe which my friends like so I can use that. They like sour so no problems there.

Any thoughts on time in secondary? I normally only go for a week at 28C. I assume a longer secondary will give me more raspberry. Should I turn the temperature down?

Pittsy,

Sorry for the hugely belated response. I made a 100 pints each of raspberry saison and session strength American IPA. Both were well received.

I personally found the saison more interesting without the raspberry but each to their own and the customer is always right.
