Hi guys, I don't have a brew fridge so I ferment around 18. Does anybody have a reliable fake lager recipe? AG BIAB.

If you use California ale yeast I've heard you can get a pretty decent approximation at higher temperatures.

you could do a kolsch it ferments at 18 happily you would need wlp029 kolsch yeast from white labs or similar.
tp kolsch

Original Gravity (OG): 1.054 (°P): 13.3
Final Gravity (FG): 1.014 (°P): 3.6
Alcohol (ABV): 5.31 %
Colour (SRM): 4.3 (EBC): 8.5
Bitterness (IBU): 14.6 (Tinseth)

84.99% Pilsner
10% Munich I
5.01% Wheat Malt

1 g/L Hersbrucker (2.8% Alpha) @ 70 Minutes (Boil)
1 g/L Hallertau Mittlefrueh (6.3% Alpha) @ 20 Minutes (Boil)


Single step Infusion at 66°C for 90 Minutes. Boil for 90 Minutes

Fermented at 18°C with

According to the post it uses WLP810 San Francisco Lager yeast brewed at 15c and not 18c as the OP has stipulated.

Specifically, I meant that I had heard someone saying they brewed a lager with WLP001 at 15c with good results.

I did not taste the results myself though as the comment came from a guest on the Brew Strong radio show.

Thanks for your replies guys. I'm gonna do a kolsch style using what I have and can get easy, lager malt, carapils and munich, plus tettnang hops I have.

As for the yeast I'm going to 'try' a mangrove jack workhorse which I also have, it apparently can do the job at 18c. Its all an experiment so I will see what happens again! When I'm feeling flush I will buy some liquid yeast for another batch.

Scott,
I'm fermenting a lager in the garage at the moment. I've simply stuck a celltex box around the fv, put a 60 w greenhouse heater inside with a thermometer. I think the thermostatic socket I was using isn't working, but with the heater full on it is keeping the temperature around 11. Just an idea. RD

Interested to hear how you get on scott as I'd like to have a go with that yeast myself.ive used it at high temps before during summer and it was clean but developed a rubber aroma later on which turned into banana.

Well it's sat in the outhouse at 12 degrees and needs another ten days really but I had one at the weekend. I loved it, like a super tasty Czech lager. Great carbonation and very refreshing.Image
