Recipe Wanted

At this time of year I really like Golden/Blonde hoppy ales. I recently had the Dengie Gold which was superb and the Styrian Stunner I brewed was really very very good and I have some more about to be kegged.

I want to make something along those lines but was wondering if anyone has any suggestions bearing in mind I have some

Amarillo
Centennial
Aus Galaxy
US Apollo

Hops that I could do to use up.

I did a singled hopped blonde ale a couple of months ago, it was great,


Name: Galaxy Chaser

Grain Bill:

2000g Marris Otter 45%
2000g Lager Malt 45%
450g Wheat Malt 10%

Hops:
30g Galaxy 13.9% 60min
20g Galaxy 13.9% 5min
40g Galaxy 13.9% dry hopped

Mash at 67°C for 90 minutes
Boil for 60 min. Add a pinch of gypsum at the beginning..

Yeast:
Ossett Brewery Thwaites Strain
Ferment at 20°C
Brew to 24 litres
IBU: 53

SG: 1038
Everything went ok, except I forgot to add the irish moss

The sod is though, I have no lager malt.

You can use just pale or Maris in place of the lager malt, just make it 4kg. Or something like Vienna?

Next Brew: AG#63.

Beer Brewed (2015): 136.4 Gallons
Beer Brewed (2016): 90.0 Gallons
Beer Brewed (2017): 20.0 Gallons
Beer Brewed (2018): 0.0 Gallons

First AG Brewed: 11.4.2013.

90% marris otter will work just fine :)

Safale 04, 05 or Nott?

(I live down south now but I used to love Thwaites when I was growing up)

Either the S04 or Notts!
It's up to you!

I got the Thwaites strain from Ossett Brewery, I've gone back to using Notts tho now
