I would imagine the only problem you'll have, will be wiping the grin off your face after your first taste.

The troubles of our proud and angry dust
Are from eternity, and shall not fail.
Bear them we can, and if we can we must.
Shoulder the sky, my lad, and drink your ale.

I'd recommend US05 or 001 yeast personally.

I've heard nothing but good things about nottingham. Clean, especially at lower temperatures. Compacts down really well.

Is this yeast choice going to be a bad choice for my beer? :(

Thanks for the advice guys.. can you provide any reasons for your preference of 05 or 001 over nottingham?

All I'll say is that Citra has a harsh bitterness. If you're not into things being too oily and sharp, then maybe roll the bitterness back to 35.

Otherwise I second the above comments...citra is incredible.

totally agree mines lovely at 32.8 ibu's
any more bitter might be detrimental to the fruity flavours
absolutely no sharp flavours here

That's great advice. I'll lean back towards 30 IBU. Cheers!

Move the 90 minute later on in the boil or take some of the hops out of the 90 min addition?

My mate did a brew with Citra and he likened it to the smell of cat piss.

Brew day went ok. Had issues with the sparge. Namely me forgetting about 8 litres of it!! I'll post in the brew day thread.

Yeah it seems some people get the cat piss thing. Some people adore the hop. Maybe it's like that whole asparagus and smelly wee think? :D

Looks like a nice pint. All it needs now is a nice label for the bottle.
I look of the lead windows in the background too.

Very happy with this.

Seems to be suffering a lot from chill haze which has confused me. I do t usually get it this bad. I used protofloc in the boil and got the wort chilled in 20 mins. Weird.

Citra is amazing. Try it with Amarillo. You get forest fruits and apricots in the taste. I use Amarillo in the middle and Citra at the end of the boil. Too early to open one, I've got to drive :drunk:

I drink responsibly. I never spill a drop. :drink:

Funnily enough this is my next brew. Amarillo and citra. Do you dry hop? I was planning to

Yes Nick, I never fail to dry hop. I'm a chucker inner, no bag. I don't find a problem with clogging of the syphon for bottling/kegging.
Sitting in my keg, just about ready to drink is "Morris Cowley" (I always use classic car names"
It came out at 23l @1048OG from 4KG Maris Otter with 200g of crystal mashed at a low 65C.
60 mins 15g Northern Brewr
15mins 20g Amarillo
0 mins cooled to 90C 20g Amarillo plus 20g Citra
Dry hop 14g Citra and 6g Amarillo at 7 days
Kegged after 18 days
Yeast was Gervin GV12, which I'm told is Nottingham. I used Irish Moss at 15 minutes.

It's tasting amazing. So fresh with a nice bitter tang. I generally don't like it too bitter, this is just nice for me.
Best news is I've got a full keg and it will get better with another week of 2. Oh bliss!

I drink responsibly. I never spill a drop. :drink:
