I have loads of grains and hope that I need to use and no idea what to brew. I'm going to do a variation of my stolen simcoe but not sure what else I should brew.

I have the following ingredients.

15kg pale ale malt
3.5kg Bohemian pilsner
2.3kg Munich
3kg crystal
300g aromatic
450g Vienna
750g pale wheat malt
600g roasted barley
750g caramel
1kg chocolate malt
250g biscuit
250g carapils

65g target
55g Columbus
50g EKG
95g magnum
100g simcoe
165g saaz
20g centennial
20g cascade
100g hers brucker
And x2 nearly full bags of unknown.

I'm planning on placing an order on Monday so can add to this but most are already well over a year old and I want to do a few brews to get rid of it.

Kegged:
Simecoe APA (HBF Donation)

Bottled:
Galaxy Pale Ale, Woodfordes Wherry, Bella Brew Pale Ale, Strawberry and vanilla Pale Ale, Mixed fruits cider, Elderflower and grapefruit fizz.

Maturing:
Rhubarb Wine, WOW rose', Elderberry wine, Mixed berries wine, Elderflower and grapefruit wine, Elderberry wine.

Next Up:
German Pilsner, Guinness Clone, Chateau De Roi selection kit, Strawberry and lime cider.

Pale, bit of carapils, bit of crystal, 1.042 OG, 30 ibu with target, dry hop cascade/simcoe/centennial/Columbus, as long as they smell good. Us-05 yeast. Ready well before Xmas and gonna taste awesome.

Otherwise the pils, Vienna, saaz and a Belgian yeast will make a good quaffer.

What about some big beers to get through it quickly. Imperial Stout, or a Barley Wine maybe.

First a RIS for Christmas 2017 that's 10kg used.
That will leave you the ingredients for a nice bitter for this Christmas.

Cheers everyone some cracking ideas! Going to brew a few and try DIY recipes but I also like the idea of an imperial stout. I brew BIAB though so it would have to be a 10l batch. Any recipe reccomendations for the imperial?

Only brewed one Imp Stout so far, it was GA's recipe from here. It was really good though! I poured it at an event and a few people asked if it was on nitro. It wasn't but it was so smooth and even had those tiny bubbles you get from a nitro pour.

I think I've just talked myself into brewing it again :lol:
