Do you think this malt bill will be ok? I've got 500g of Amber malt i need to use up really. Looking for a nice hoppy red ale. Hop schedule is just notional at minute btw.

I would add some (~5%) light coloured crystal malt in there (carapils or caramalt) to give a bit of sweetness to help bring out the hops. Especially as amber malt can be pretty potent or I'd take out the chocolate. I made a good IPA way back with about 93% MO and 7% Amber. http://forum.craftbrewing.org.uk/viewto ... =67&t=4820
