Cold pressed coffee stout recipe ideas

Postby The Goatreich » Thu Jun 16, 2016 10:08

Hey all,
I recently had a coffee stout by Left Handed Giant brewery called Breakfast Serial (I think that's what it was called) and it was absolutely amazing, and I really want to try to do something similar.

The rough specifics would be:
Around 6% ABV, perhaps less, but certainly no more than 6.5%.
No creaminess. So therefore not a milk stout or oatmeal stout. I dislike sweet and creamy stouts, unless they're absolutely extreme on the sweet scale like dark cherry stouts.
Decent enough when served from keg without Nitrogen.
Will be served from a cornie without temp control.

For the coffee, I was cheeky and asked LHG for any tips and they just said they add espresso straight from their machine. I was thinking of running with this, and making a batch of cold pressed coffee and adding it to the secondary for a week. This would hopefully add less acidic elements to the beer, but still have a great coffee flavour and aroma.

Any thoughts for coffee quantities, and the actual base recipe? Perhaps just a simple dry stout recipe and upping the ABV a bit? Has anyone used cold pressed coffee in a beer before?

I suppose you could add a little bit at a time, then taste it. The recipe I have in Gregg Hughes' book advises 500ml of fresh coffee in the FV after 4 days. The stout is 5.7% and 40 IBUs.

2016: 330L brewed (72 gallons, over 8 firkins)
2017: 105L brewed (need to update this figure)
Drinking: Landlord clone
Conditioning: ciders from 2016, hedgerow barrolo, 1914 Courage RIS (10%).

That seems like a decent amount.

I should have said that this will be a batch around 19l.

Hot coffee = tastes like a cup of coffee
Cold press coffee = same but smoother
Coffee beans = Starbucks like aroma in the finished beer.

I added half a bag to a 20L pin and it was massively aromatic, maybe too much!

I hadn't thought of using beans, I now wonder whether it's just the aroma I'm after, or the actual coffee flavour (which I could obviously get some of from the malt).

Beans give both aroma and taste but it's subtle I added the beans 4 days before bottling never sterilised them just threw them in

What did you use as a base recipe?

Do both! Add beans to half of the batch, or even 1/2 beans per bottle :)

It's getting kegged, but yes, splitting at the secondary stage into two buckets isn't a bad idea at all!

A local microbrewery, Newcastle Brewing, do a Saison with cold pressed coffee that is really delicious, it has all the flavour but is really smooth.

Have a look at DIYDog, a few of the imperial stout recipes use coffee (e.g. Dog E, Black Eyed King Imp, Cocoa Psycho). Sometimes cold pressed, sometimes whole beans, sometimes ground, sometimes at the end of the boil, sometimes in fv. I guess that's not narrowing it down. I'm looking at doing the Mikkeller Beer Geek Breakfast Stout recipe from the Mikkeller book. It calls for 0.5 L of coffee to be added a few days before bottling (made with 50g ground coffee).

The troubles of our proud and angry dust
Are from eternity, and shall not fail.
Bear them we can, and if we can we must.
Shoulder the sky, my lad, and drink your ale.

I'll check that out. I have the DIY dog downloaded but have never used it in anger.

Global average carbon emissions - one ton per person per year.
Current emissions in UK – 9 tons per person per year!
Eight million tons of plastic dumped into the oceans. Every year!

Looks good! I would leave out any hop additions less than 30 mins personally, let the coffee shine. We have 20L of coffee bean mild at redditch beer festival this weekend, last minute request so I dumped them in and sent it off - tasted great!
