Has the stout gone off

Postby boab44stout » Wed Dec 16, 2015 18:35

Hi all kegged a stout for Christmas but i think it's went wrong used sweet orange peel its tasting weird like orange flavoured marmite so think it will need chucking down the drain.Haven't had this before might be due to a yeast infection during fermentation.
Any ideas it's never happened before

I would say infection. My porter that got infected was a lot like brown sauce.

did you do anything to sterilize the orange peel before adding? Was it added during or post boil?

Put the peel in the last 15 mins of the boil as per instructions I tasted the wort before fermentation and it was nice looks like an infection it's a pitty as it was under nitrogen for Christmas too.
Well its the kitchen sink for this batch

"what you are tasting is yeast cells which have died, ruptured and spilled their beer-spoiling guts into your brew..."

this extract from http://www.pencilandspoon.com/2011/06/w ... lysis.html

Interesting read.........
The article also suggests why this happens and is another lesson learned. :thumb:

Really good read on that found it very very interesting as I now understand why and how this happened and also I'll understand the yeast itself a lot better.
Thank you for all of your replies on this think I'm gonna invest in some type of better temp control but also might stick to certain yeast strains

Great stuff think I might get a we book on yeasts. I have to do some research on the subject might start using liquid yeast again as it always starts really fast with no lag time
