For anyone interested, I've been researching Ridley's Mild and with some help I think we've managed to reverse engineer the recipe:

Ridley's 'XXXX' Dark Mild

All Grain: 23 Litres.
Style: 13A. Dark Mild.
OG: 1.035
FG: 1.009
IBU: 24
EBC: 26 (105 Post Boil).
ABV: 3.4%
Balance: 0.68

Grain Bill:

2,652g Mild Malt (78%)
357g Crystal Malt - Medium (10.5%)
98g Torrified Wheat (2.9%)
3g Chocolate Malt (0.1%)

Hop Schedule:

24g Fuggles Leaf 4.9% AA @ 90 Mins: IBU: 13
19g Goldings Leaf 5.2% AA @ 90 Mins: IBU: 11
7g Fuggles Leaf 4.9% AA @ Dry Hop - Cask: IBU: 0

Boil Additions:

289g Invert Syrup No. 3 (8.5%) @ 10 Mins.
55ml Brewers Caramel @ 10 Mins.
3g Irish Moss @ 10 Mins.

Yeast:

WLP022 - Essex Ale Yeast - 1L Starter.

Mash: 90 Mins @ 67 Deg/C.
Boil: 90 Mins.

Notes:

Correct OG, ABV, EBC, IBU, Name, Ingredients & Yeast for Ridley's Mild.
Invert Syrup No. 3 - 96.6% Golden Syrup/3.4% Molasses.

Cask conditioned for 2 weeks @ 12 Deg/C.
Carbonate and dispense @ 1 Volume CO2.
Dispense from Cask and/or Beer Engine.

That's what it says 0 - 0.1% Chocolate.

I'm sure it means something to you but I have no idea who they are haha, I took it from the second edition.

Edit - Here is an alternative based on the same recipe but using brewers licence made to fit, the grain bill equals 100% and the Invert No. 3 amount is 8.5% of the total grist.

Ridley's 'XXXX' Dark Mild

interesting kyle
your second recipe is similar to the one I have written down ,except I had pipkin pale malt instead of mild malt.
Have you brewed the first one yet ,did you drink Ridleys ,if so how does it compare.
where did you find reference to ridleys brewing logs/ron pattinson
sorry for questions but mild is my favorite style and when I lived in uk drank large quantities of Ridleys,Adnams and Tolly Cobbold mild.
I brew a clone of tolly mild and batemans mild quite often and just happen to have some wlp022 essex yeast frozen in my freezer so may well brew this soon

Hello Paul,

It does use Pipkin malt in the recipe but I only use Mild malt for Milds. I haven't brewed it yet but I will probably use the yeast cake from my next Mild on it as that is the old Ridley's yeast.

I didn't actually find the brewing logs, they were courtesy of Good 'Ed, he dug them up. I have the recipe for a Tolly Mild that will probably come after the festival as I have a few in the queue already. Sadly Ridley's had already gone defunct before I ever got a chance to drink any.

The first one is going strictly by the ratios given by Les Haworth, the second is roughly the same made to fit.

I've got the one before this, just called Mild. Ron's books, with the exception of his guide to vintage beer, are a collection of his posts from his blogs, loads of tables and some recipes from the logs, all very entertaining, and it saves you trawling through his webpage, and also I prefer books. I'd go ahead and get it if you are interested, I was only looking at it last week.

If you want to read anything about the history of Mild then nobody but Ron P comes up to the mark. David Satula is a commercial brewer and writer from US, but I've never read any of his books.

You buy them off Lulu and if you watch Ron's blog he gives out discount codes that you could use. These aren't necessarily recipe books, although his books do contain brewing logs.

I did look at the LuLu but wasn't sure if it was legit as I hadn't heard of it before now.

I do keep an eye on his blogs and I've come across a few by varying my searches for Mild that have been very informative.
