This is a pretty classic and well balanced British Ale that uses the Australian Galaxy hop. It's a blend of biscuit and subtle malty aromas with a reasonable bitterness and a restrained whiff of tropical fruit. The nearest commercial beer you can buy is probably Mad Goose by Purity or Sunbeam by Bank's - fans of Oakham Citra may enjoy it too.

Balance and drinkability is the key here, so for those looking for a big stinky full on Galaxy beer, you might consider instead.

I've adjusted the recipe from the original for those with wort chillers (no chill adds IBUs.) This recipe would be great with any American, Australian or New World hop, so feel free to recalculate the recipe using your chosen hop. Any good English Ale yeast will suffice but I was actually quite impressed with MJ M07.

What's the aim/outcome of the mix of maris otter and generic pale malt?

Maris otter is quite high flavoured so it takes the intense biscuit flavour out leaving a more subtle one. In this beer it makes things more quaffable and doesn't drown the hops. Mixing mo and pilsner malt has a similar effect :)

Ah I see. I'd seen people do the same with pilsener or lager malt + MO, but I've yet to use generic pale malt so didn't realise it has the different flavour as well

I think they are quite different! I couldn't say what they were as mine came from dean on ebid. That said, i guess either would make a great beer
