Return to brewing - Brett infections...

Hi guys,

I used to post here back in the Old Days but stopped brewing when about 300 pints of my beer got a Brett infection :vomit:

Brett got into absolutely every bottle and corny I have. Pretty discouraging so I stopped brewing.

However, the fact that ales and stouts are being pushed off the supermarket shelves by endless acrid identikit "craft" IPA's has convinced me to go back to brewing my own.

I'm ditching all my old kit, have ordered a Grainmaster and new tubing and fermenting barrels, but I can't just ditch my cornies!

Can anyone recommend how best to go about sterilising my cornies, what products/methods should I use?

Having had issues with bleach affecting the taste of some brews when I've not rinsed thoroughly enough I now rely on Oxyclean to clean my cornies which is then rinsed and finally use starsan to sanitise for storage until next needed. Seems to work in my situation.

Sodium Hypochlorite solution = Bleach.
Bleach in contact with stainless steel for prolonged periods of time causes corosion of stainless steel.
a 1:10 solution of bleach is good for a clean and then a good rinse with water afterwards.
You need to recirculate the bleach through the disconnects as well!
If you cannot recirculate your cleaner/sanitiser, strip the disconnects and soak.
Most breweries use a 5% peracetic acid concentration for sanitation after cleaning.
The peracetic acid is effective against all yeasts and mold.
It is also a no rinse sanitiser! (Only need a two minute contact time)
After your cleaning and rinsing, circulate peracetic acid through cornies and disconnects (or soak!) for two minutes minimum.
Close the cornies, charge with CO2 and they are ready for use!

Videne antiseptic solution pretty much kills anything. At doses of 1.25ml per L this is a no-rinse solution and can be made up with tap water. It is only a steriliser; it has no cleaning powers and is Iodophor based. I have used used it in my cornies and fermenters after making Brett beers and had no on-going brewing problems.

One of the advantages of brewing yourself is that you brew to your taste, the trouble is when you go out and visit the real world you may be even more disapointed.

I started using a combination of VWP and Starsan after I got a white growth on the top of my brews. Google reported the Starsan would not kill it, VWP did. Now deep clean with VWP, but still use Starsan for day to day and after rinsing VWP.
