Fit a stainless steel thermowell (available from The Maltmiller) and your problem will be over. Whats more your temperature control will be more accurate because the probe will be be where it should be. In the middle of the fermenting beer. Just take care where making the hole in the FV. It needs to be a tight fit.

If you are controlling the temperature of barreled beer fill a bottle with water stand it next to the barrel and stick your sensor in the bottle. That way you will have less fluctuations in temperature.
