Quick recipes ideas

Hi everyone, i appreciate this id probably ghe wrong place to discuss recipes but it's a bit short notice and I need some ideas. I've not been able to brew for at least 8 months for various reasons but am going to brew tomorrow as it's the first day I've had free. I bought some malt and have some speciality strains and some frozen hops. I'm after some recipe suggestions so I can get it done in the morning. This is what I have:

3.7kg Maris otter
500g wheat malt
300g flaked barley
300g Amber malt
300g carafa

100g Amarillo 7.4%
50g Willamette 4.8%
30g Chinook 12.7%
30g target 11.1%

M36 Liberty Bell

Any suggestions greatly appreciated.

You’re going to be driven by your yeast to some degree, then the hops. With your malts you could make quite a range of styles.

I’d go for something in the pale/amber ale and IPA styles, sessionable at around 4%, 35 IBUs.

Target for bittering as it’s a nice smooth bittering hop. Amarillo is perfectly capable of standing by itself and giving a great account, but since you have it, Chinook would certainly pair up quite nicely (both as late additions, 15 mins then flameout and let stand for 30 mins). I’d be tempted to add Willamette at 30 mins to round things out.

As for grist, keep it simple. Mostly pale, but add around 2-3% wheat and maybe the same in Amber for.

Normal mash routine (65C for an hour), samecwith bool - 60 min is fine for a pale beer.

Oh, and dry hop heavily with all that Amarillo you’ll have left.

2017: 105L brewed (need to update this figure)
Drinking: Landlord clone
Conditioning: ciders from 2016, hedgerow barrolo, 1914 Courage RIS (10%).

Alternatively, with that flaked barley and carafa, you could go with a stout. For hops you’d want to stick with Target and Willamette.

Maris and a bit of wheat, Chinook bittering, 100g Amarillo dry hop or flameout, 25 ibu, ferment and drink, jobs a good un, session pale!

I bunged all the MO, Wheat and amber in.

Target 15g @ 60
Willamette 45g @ 20
Challenger 15g @ 10
Amarillo 25@ 10
Challenger 15g @ FO
Amarillo 25@ FO

and will dryhop with 50g Amarillo on weekend.
