I'm planning on using around 10% cane sugar in a dipa, mainly to aid dryness.

What stage of the boil would I add it?

Anytime is correct but anytime more than ten mins before the end should ensure that anything attempting to colonise your sugar is well and truly boiled to death.

I always add half way through the boil, dissolve it first in some wort taken from the boil, this way you don't end up with burnt sugar all over your element.
