Wood chips + Amaretto

Postby rlemkin » Thu Dec 04, 2014 15:32

I'm thinking about how to getting some of the flavours of amaretto into beer as my partner loves amaretto...

Given how sugary the stuff can be I don't think adding it in liquid form is a good idea. Instead perhaps I could soak oak chips in amaretto and use them in secondary?

I had a delicious 4% Hazlenut Mild by Brass Castle brewery and think that this could be a base to begin from, but with the amaretto wood chips instead of hazlenuts.

Any thoughts?

There is an Amaretto flavoured Vodka(Smirnoff) if you want to go down that route and avoid adding sugars. It claims to have almond and slight sweet cherry flavours. You could soak your wood chips in that and add it in secondary or at bottling. But would you get enough Amaretto flavour from it?

What's wrong with almond extract? I'd imagine the Hazelnut Mild you had used Hazelnut extract after fermentation was over. I know that Rogue use extract in there Hazelnut Brown Ale

diluting some (2-300ml?) 20% liquer to a 5gallon batch wont raise the alcohol level by much, so wont impact on the fermentation and the sugar in the syrup will provide food for the yeast so wont give u a sweet beer (unless artificial sweetners are used??

Almond extract - as used in baking - sounds like a great option to me.
