I'm thinking about how to getting some of the flavours of amaretto into beer as my partner loves amaretto...
Given how sugary the stuff can be I don't think adding it in liquid form is a good idea. Instead perhaps I could soak oak chips in amaretto and use them in secondary?
I had a delicious 4% Hazlenut Mild by Brass Castle brewery and think that this could be a base to begin from, but with the amaretto wood chips instead of hazlenuts.
Any thoughts?
