AG19 Punk again

if you like punk try this
it will be my 3rd punk to date

my all time top brews to date punk ipa pt 2 red simcoe followed by simcoe smash

many a review has had [all at the Ossett brewery tour tried punk take 2]

The first one i made was very very close to the original punk side by side testing involved
part 2 punk was even better added the missing biscuit to it then the beer sang lovely balance malt hops etc added 200 grams of biscuit that time

this time i am upping the biscuit from 200 grams to 250 grams same with the carapils from 200 to 250 grams
also upping the hops a bit zero dry hop

aiming for 27 litres @ 5.8% ABV
50 ibu which is perfect



6.5kg maris
300g carapils
300 gram biscuit

Hop schedual
90 mins
30 gram Simcoe leaf

15 min half whirflok

10 min
10gram anthunum pellet
25 grams vics secret pellet
20 gram nelson sauvin pellet
20 gram simcoe

15MIN 1/2 whirflock

Zero seap at 80C 20 mins
20 gram simcoe leaf
20 gram vics secret pellet
20 grams anthunum pellet
20 gram nelson sauvin pellet

dry hop in secondary
30 gram nelson sauvin pellet
50g Ahtanum pellet
55g Vics Secret pellets
50 gram simcoe leaf

looks like a belter Noby! that bottle I had was unreal, was that the first or 2nd batch? u going to TST this year?

I'm going to have to give this a go soon I think, I just need to use up some of my 3kg of hops before I buy any more :oops:

A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

that was punk mark 1 the first one

adding biscuit malt is a massive improvement and increasing the carapils is another + :electric:

mashing at 63c for 90 mins gets the correct dryness
which seems to always get to 1.008

but yes really have massive hop aroma and flavour by doing my same old way of
fermenting at 17.5 TO 18C for usually about a week to get the 1.008
then to secondary at a cooler 15c
for a period of time when most of the leaf hops have sunk or parochially sunk
the pellets well you know they leave your fermenter with frog slime greeny oily topping once they have dissolved in the base of the fermenter
but what i do is whether its right or wrong is
grab the fermenter and just give it a move now and again just enough so as some type or wave movement happens
that when you look at it you see the hop pellet mess dissipating into the beer again
just a slight movement of the hop matter twice a day usually for me anyway encourages them to drop out just like normal whole leaf does
when i see 60 to 80% of the hop mass has dropped about 5 to 9 days time
then i transfer bottling bucket
leave that for a day back at 15c again
then bottle

slightly more bitter at 59 IBU
Slightly stronger EST ABV 6.4%
20 grams safale o5 rehydrated with 200ml

Over 6gr/litre of hops dry hopping. No wonder I can never get the aroma I want, I've never been above 3gr/litre

will be batch priming bottling today
hardly any hops floating now
with 130 grams brewing sugar boiled in 300ml cooled
to achieve 2.1 Volumes of CO2

Punk IPA, one of my favourites. Also been enjoying Bengali Tiger which you can get in cans from Wetherspoons at the moment, pretty similar, very hoppy beer. Thans for the recipe, I'll have a go at this for next months brew. I've moved from 3V to BIAB now so may come a little different (thinner mash) but looks worht a try. I suspect much of the boost to flavour comes from the dry hopping so will certainly try that.

Gonna give this a go in the morning.
Have the wlp007 on stir plate at the moment and im collecting RO water.
Just need to work additions for water profile.
Only difference will be the yeast and treated water.

i treat my water by adding
3.8grams gypsum 0.2 gram chalk to mash

and
5 gram gypsum 1gram salt 3,5 grams magnesium sulphate 5gram calcium chloride to boiler

im getting for mash..gypsum 2g...epsom .4g calcium 3g..chalk 1g and phosphoric acid 1.6ml
sparge water 1.5g...epsom .3g calcium 2.3g and phosphoric .6ml
Cany nail down an punk water water profile and i think it should be malty but tonnes hop auroma rather than bitter and full hop auroma...I think

I dropped temp down to 1C in secondery to drop hops to bottom. Its in keg now smells much better than last punk i tried absolute hop heaven.
Gonna put some gelatin into keg to help clear it and then taste in 3 days.

Unfortunatly not :oops: I had some other things goin on so no time for pics. It had a lovely reddish colour after primary but when hops was added to secondary it looked like something a witch would brew :D First time using pellets in secondary.
I will have a finished in glass photo 3 days time. Its carbonated but untill i clear it, i refuse to taste , Must resist :cheers:
