We should keep track of how much is getting brewed this weekend. I'm going to be adding to the total on Monday, Going to try Mysterio's SNPA.

That was never a brew that I got close brewing compared to the bottle version. There was always something I couldn't get right.

TBF Big Bank Holiday Brew!!!

Postby Joe1002 » Sun Aug 30, 2015 08:55

I did Calum - 2 x 5 gallons. Here are some of the pictures.

First up a Columbus single hop, for no other reason than I am trying to use up home hops.

Liquor heating up

Mashing

Here's on I made earlier (about 2 weeks ago)

Slightly full but nice and clear

Start of the boil

A minute amount of bittering hops

Chilling

Image

1.052 wort (apologies for the rubbish, out of focus picture)

Image

It's a shame, I thought I took a picture of the yeast before pitching but seemingly not. Anyhow, it was some very healthy and excited yeast kindly given to me by Phil at Wibblers. Now for the second brew (a Milk Stout) I was getting tired hence only a few pictures.

Half way through the mash

Image

The yeast getting ready. I don't often use smack packs but giving this one a go.

Image

A fine beer may be judged with only one sip, but it's better to be thoroughly sure.

Well I have mashed in too. Normally I make my own recipes but have gone for a Pendle Witches clone today. I also have a new TS5 mag pump to try out at the end of the mash for recirculating and transfer. Not enough to drink here...

Liquor came to strike on at 6.30 using a timer.

Grain shot

Obligatory coffee

Mashed in

Calibrating pH meter

PH is fine. To be honest I'm not bothered about pH; as long as I get the alkalinity right it should be fine. Loads of calcium in my water (100+). Took a TDS reading too before treating my water last night. It was 335, whereas the last couple of brews it was 320.

Image

I will be using Thwaites from a Brewlab slant (A1). Before stepping up I made a couple of new slants which have worked.

Time for toast and more coffee :-)

And even I have joined the fun. Not content with the 2100L of beer I brewed (in collaboration with others) I have decided on 25 (Ish) litres of a Bitter (8B)

So with 22-23L at 1.043 and 38.9 IBU

4Kg Crisp Pale Malt
500g Carapils
150g Amber Malt
50g Black Malt

Mashing at 40C then 61C and finally 71C of 5 / 45 /45 Minutes . . . 1C per min between rests

It's going to be a single hop, with good old goldings 80 minute boil

50g at 60 minutes
25g at 10 minutes
50g for an 80C steep

Then Chill

Ferment with Nottingham 20C for 1 Day. . .dropping down to 18C over 24 hours, 3 Days at 18C then ramping up over 2 days to 21C. 2 days at 21C, and then dropping to 12C over 2 days. then 7 days at 12C to drop the yeast.

Today is the day I finally commission the Chronical

Well recirculating and changing to Warminster low colour pale from Bairds has made a massive difference to efficiency. I've been consistently getting 66% mash efficiency previously, but have got 81% this time. Not bothered about efficiency generally, but going to have to liquor back later, probably.

Collected 28.3l at 1.046

Now bringing to the boil and will be using fuggles as per the recipe

Ok So there was the first big f*ck up.

I have just tipped 15Kg of hops into the recycling bin!! Ok they were somewhat old, but I know I should have raided Phil's hop store at the weekend  :(

Image

Now left with a load of old stuff from Rob at the malt millter . . . I may go with a single Bobek (2012) addition.

I've got some 2008 Souther cross that at least smell like hops

Otherwise it's a bitter hopped with Saaz.

Order more hops

And just in case you think I'm joshing

Ok So going with 50g of 2010 Apollo as bittering and 2012 Bobek for flavour / aroma.

Will probably drop down to no more than 500g of any one variety, and make sure that they get used quickly . . . still plenty of space now in the hop freezer :(

Add me to the list.

I've started 2 x 15 litre juice wines this morning and my new shiny boiler now has a hop stopper so I will be brewing a small batch BIAB tomorrow morning.

Pics to follow.
