Postby Rolfster » Wed Oct 18, 2017 22:08

Hi all

I brewed today. Normal a fair for me. One brew split into different fermenters and each treated a bit differently.
Ive gone for an
Earl grey ipa
Apa
Double ipa
And the last little bit is just fermented out cool.
More details to follow when I get time!

How'd you get the DIPA, rack onto dme/sugar? I do the same for imperial beers sometimes. Brewed an imperial stout, weizenbock and recently a braggot this way

I took a bit of the first runnings and some pale spray malt and some water.

Then I panicked and put some golden syrup in there for good measure!

So the malt bill for this was
15.5kg of extra pale Maris otter
530g flaked oats (glucan rest was performed )
500g of both pale crystal and cara gold

Also in a separate pan I put 400g of pale spray malt 500ml of the first runnings 15g of galena and about 2 liters of water. This was boiled for about 1 hour. Half way through I added a bit of the wort from the main boiler and 100g of golden syrup.

Hops wise I bittered with 38g of topaz and 22g of galena... that came to 37 ibus according to my brewing software.
I did a 90 minute boil.
Late hops were 100g pioneer at 5 minutes, and the 65g of citra and 50g of both mandaria baveria and amerillo once the wort was at 80 degrees.

Once the wort was all chilled I filled fvs. One had the 'enriched' wort added as well and a hand full of hop pellets (mandaria baveria, amerillo and nelson sauvin). One had 500ml of cold steeped earl gret tea (30g of tea) added. The other was left plain.

These are all going to be delightfully dry hopped!!!

The leftovers from the boiler went into amother fv (with a bit of hop squeezing) that will be fermented cool to give an easy drinker for lager drinkers!

I forgot to write down my numbers for this one!
The main wort ended up at 1.051. The double ipa ended up at 1.060.
I think I've got 26l of earl grey ipa
24 liters of apa
20 liters of Dipa
And maybe 10l of the leftovers....

I added another handful of hop pellets to the DIPA on Saturday.
My cellar has been smelling great!

So I dry hopped these on Monday and should be bottling them on Thursday or Friday.

The earl grey ipa had 6g nelson sauvin and amerillo, 8g citra cryo hops and 50g of earl grey tea.

The Apa had 21g of mosaic, 19 of amarillo, 10g of nelson sauvin and 19g of the citra cryo hops.

The double ipa had 26g of mosaic, 8 of amarillo, 12g of nelson sauvin 10g of mandaria baveria and 24g of the citra cryo hops.

Can you tell I was using up the tail end of some hops?
