Learned a few things since my last attempt, so hoping for a big improvement.
Switched the sulphate:chloride ratio around, in favour of chloride.

Brew length: 23L (BIAB)
ABV: 6.9%
OG: 1.061
FG: 1.008
IBU: 40
Colour: 10


Grain Bill

5kg Propino
1kg Flaked Oats
300g Carapils
100g Dextrose

Mash Temp: 65C

Hops

Denali // Citra // Mosaic // Azacca <-- 30g each at flameout (80C) for 20 mins

Denali // Citra // Mosaic // Azacca <-- 35g each dry hop at high krausen

Denali // Citra // Mosaic // Azacca <-- 35g each dry hop post fermentation for 5 days


Yeast

Vermont Ale (slurry pitch from previous brew, no starter)

Water

Calcium 126
Magnesium 10
Sodium 10
Sulphate 90
Chloride 188

Mash pH 5.21


Had a few issues with stuck fermentation recently so I really upped my insulation and managed to hold hold between 65C - 64C.
Tested pH and damn near nailed target as well.

Managed to hit both pre boil volume (33L) and gravity (1.049) but ended up with a little less in the fermenter at a slightly lower gravity of 1.058. No big deal I guess but still unsure why this happened considering my mash was to plan.

I used slurry from a previous brew but I've no idea if I over/under pitched... How do you tell?
Either way, it's fermented down to 1.014 in less than 48 hours of pitching.

Just dropped in 140g of the first Dry hop to see how this bio transformation thing works. I plan to rack and go with part 2 later this weekend/middle of next week.

Unsure about the 1.008 FG and whether it will be too dry for the style or even if I'll hit it, but I'm excited to find out!

Looks good, I brewed one of these NEIPA's recently but I hopped it with Equinox, Azacca and El Dorado. Turned out really nice (not up to Magic Rock's Cannonball though). Have you added the dry hop as pellets? This is where I think Pellets are better then leaf.

I’ve never used anything BUT pellets since brew number 1 to be honest!
I’m that used to them, I don’t really have any desire to use leaf hops I guess.
I chuck them in the FV and then crash to 1-2C for around 48 hours prior to racking, and generally speaking, I leave almost everything behind.

I missed my “high krausen” window for the first dry hop, which judging by the speed it has fermented at, would have been around 24 hours after pitching! It’s still fermenting however, so this biotransformation (if it actually is a “thing”) should still take place somewhat.
Never had a beer ferment this quick, which concerns me slightly as someone did mention I may well have overpitched – but with a yeast slurry, how on earth do you calculate such a thing?

That's the sort of dry hop process I did. A hop 'Charge' consisted of 10g of each of Azacca, Equinox and El Dorado. I added a charge into the fermenter and transferred the cooled wort on top, then added more charges at approx 48 hours, 100 hours and just before cold crash. Certainly a new way for me to dry hop. Repeated this process for my competition entry in the APA class but with different hops, see how it goes, it's not quite ready to sample yet.

The only thing I'm yet to see side by side Is hopping under pressure vs homebrew style. This whole biotransformation thing has everyone doing things that normally they wouldn't do i.e. Dry hopping during fermentation as it drives off aroma etc.

I'm excited to see how it goes because My recent brews I've been very critical of yet the Homebrew club have given Me completely opposite views of!
