While Beer is 90-97% water, it is a very tricky subject.

Natural Spring

I went for a walk in the hills above were i live today. I haven't been up for a few years and forgot there's a natural underground spring that has a well so you can fill your water bottles. As i was filling my bottle the thought came to me that this could be used to make a really nice pilsner ( my favourite beer ). The water is as pure as you could get anywhere.

My next two brews were going to be to different pilsners anyway but now I'm thinking of making two identical beers one with the spring water and one with tap water. I live in the west of Scotland and my tap water is really soft anyway!
But i think this could be a nice little experiment to see if i can notice a difference. You never know could turn out to be as good as the water in Pilzen.

I think you've got to try it :)

It's a better bet than my London river idea.

I've got a spring called Old Man's Mouth very near me. I've wondered about that too...
