While Beer is 90-97% water, it is a very tricky subject.

Well, I questioned them further. They say they are not aware of any sulphuric acid that is food grade, so I guess I'll just buy the 25% and run with it for now. Going to spend too long worrying about it and not brewing!!

I dunno Gethin, no expert here. I think this is more chemistry than cooking. Changing the PH with acid and using a small amounts not covered by 'Food Grade' criteria .

My guess is that a Campden tablet isn't food safe either.

Obviously you can't be slapdash, this is, in concentrated form dangerous stuff....... no more than 'Starsan' though I'd have thought..

I know that unless I address the water issue, I'll just be repeating the same, not quite right, results. I keep re reading Alemans 'Water Bible', trying to understand it.
I think your on the right track.
