I used to use Challenger to bitter but recently I've developed a liking for Herkules, as I find it quite neutral.

What is your go to bittering hop?

Most pro brewers I know use magnum or warrior. I use Admiral across the board so a few of our beers can be classified as all UK ingredients.

Challenger, but Magnum is very good too.

Also did a Bramling Cross IPA last month that has turned out very nice indeed.

Target is another cracking bittering hop.

Never used Admiral at home - only at the first brewery I worked at. It’s good value with the high AAUs (about 10-12 if I recall).

Back in t’ day when they were using Fuggles and Goldings for 99% if everything, they must’ve been using crazy amounts of hops. Well, actually, they were if you check out Ron Pattinson’s blog. Also, it seems Cluster was regularly used for bittering. Will have to try that with an English style beer some time. Also seen Saaz used as a finishing hop back in the 1900-1950s period forEnglush ales.
