A designated driver would probably appreciate something made just for them

Has anyone got a rhubarb cordial recipe? We have lots of rhubarb in the garden, which the wife loves, and I’m looking to make something different with it. I don’t want anything alcoholic and we already cook lots of it so cordial came to mind.

Wouldn't you just stew it with tons of sugar and strain off the liquor?

Don't know, although I'm sure that would work. The elderflower one on this site suggests lemon juice and citric acid so thought I'd ask.

Actually, now you mention it a bit more acid would be good. Could end up very sickly otherwise. :thumb:

What does the acid do, just make things taste less sweet or is there actually some scientific reason for adding it?
