Damson Gin

Damson Gin

Postby graysalchemy » Sun Aug 24, 2014 20:54

Well I haven't had much chance to brew of late or the space to with an iminent move, however in clearing out my brewing freezer I found a Kilo of damsons, so whats better than some damson gin.

The recipe is the Nigel Slater one.

500 last years Damsons
1 bottles (70cl) of Gin ( I used cheap asda this year but last year was Aldi's)
350g of sugar

All you need to do is put the gine damsons and sugar into a large Kilner jars (1.5L) Give it a good shake to disolve the sugar, this will take some time but over a few days of gentle shaking every now and then it will dissolve), then leave it for 3 months before straining through muslin and putting into a bottle. There will be more than the original bottle.

Not real brewing but mighty fine.

Probabaly still a bit early. I have a patch about half a mile away on an old deserted railway line. Went out looking for some sloes but didn't find any (too early anyhow) but found a few hazel trees but only 2 hazelnuts.

If you can't find any damsons any other soft fruit would do. I have used a combination of Blackberries, black currants and apples before now, infact it was only because of a poor year of blackberries that I used damsons as a substitution, but it is a good substitution and one I would recomend. plumbs would aslo do.

There's a fair few sloes on the bushes near me, but I remember picking them much later last year (November), does anyone know if they'll be good to go this early?

Also, anyone got any idea what to do with Hawthorns, I've seen some recipes for Haw Vodka or Brandy has anyone done one of these?

My neighbour has a Damson tree, I'll ask if I can harvest it once they come out :)
