Preserving cordials

How?

Hugh Fearlessly-EatsItAll has either citric acid or tartaric acid in a couple of his recipes.

But we have stuff like Sodium Metabisulphate and campden tablets at our disposal...

What do you do?

I'm gonna add a whisker of sodium metabi and sterilize the bottles. i reckon pasteurizing would be better for long term storage.

Especially when you realise that it's the reproductive organs you've torn from the tree to boil and drink the liquor from. I sometimes think about this when I give SWMBO some flowers; nothing says I love you like a fist full of the castrated sexual organs from various plants.

Can't remember who pointed that out to me, but I appreciate the irony.
