We made limoncello from lemon peel, but what to do with the rest of 12 lemons? Enter lemon tincture. You'd need:

pulp from 14 lemons
peel from 2 lemons, without albedo
350 gms table sugar
500 ml food grade 95% alcohol
water

Dilute alcohol to desired strength, we prefer 65%. Chop peeled lemons into small chunks, put into jar, add alcohol. Allow for 4-6 weeks maceration. Rack liquid to tall jar to settle the trub, add sugar to chopped lemons. After at least 4 weeks squeeze juice out of lemons, mix it with alcohol solution, rack to tall jar and left for at least 3 months to settle the trub. After that you can filter your tincture on coffee filter to get bright liquor or serve cloudy, this does not affect flavour in any way.

Forgive me poor terminology, I do my best to translate Polish recipes. ;)

I like the sound of this , sounds nice on a summers day . Would you drink it as it is or mix it with lemonade or something ?

With 50+% abv it's not really summer drink. :D

We have limoncello for summer, this is for cold autumn and winter nights. Limoncello is much stronger in aroma and much better suited for diluting with water (and loves mint).
