Old thread, but I'm planning on making some more soon
Recipe is a modification of the one found here
My recipe is
70cl bottle Morrison's "The Best Vodka"
20 star anise stars
1tsp fennel seeds
1tsp aniseed seeds
~125g sugar
2tbsp liquorice root
1/2 tsp coriander seeds

Sterilise a large kilner jar, add the vodka and sugar.
put other ingredients into a mortar and bash a bit, then add to kilner jar
Shake daily for a week (or until sugar dissolves, whichever is last)

Tasting notes - Too sweet for my palate Too much liquorice, not enough anise. Maybe a tad more coriander.
Therefore the plan for my next attempt at this is
70cl bottle Morrison's "The Best Vodka"

2tsp aniseed seeds
~75g sugar
1.5tbsp liquorice root
3/4 tsp coriander seeds
Same method
Will be fun tasting the difference, hope I'm closer to nailing it this time

Hey BT, did you ever do the reduced sugar one? I think I fancy a go at this too but pastis really doesn't want to be overly sweet and seeing as you're doing the experimenting bit... :whistle:

Not yet, I'm going to start it by this weekend. I've actually managed to get some real root liquorice rather than pre-ground tablet stuff. The plan will be to add no sugar at the start, then add it after infusion.

finally started this up. Few changes from the plan - I used a 2" piece of root liquorice instead of 1.5tbsp powdered liquorice, turned out we have no fennel seed in so I replaced it with an extra tsp of aniseed. I've not added any sugar yet, I'll add that at the end. Now for a week of shaking.

Hay BT,
Does it have to vigorous shaking or would a yeast stir plate work - you could leave it on there for the week without any pain?

I don't imagine it has to be too vigorous, all it'll be doing is mixing everything together. I suppose a stir plate would do the job, but I'm happy just shaking it as I'm passing through the kitchen (it's put in a dark cupboard in there)

Bottled this today, had my first glass - purely for checking, of course. It is far better than the first batch, needs some sugar adding though. I'll be experimenting from tomorrow by adding a sugar cube to a glass and messing from there. It even louched slightly which was a nice surprise.
