Mixed berry cider

Postby chub1 » Mon Dec 28, 2015 19:43

Just started this one off-
4 litres tesco value apple juice( 3 to start)
1/2 litre water
approx 1/2 bottle blueberry syrup
approx 1/2 bottle raspberry syrup
approx 1/4 bottle chokeberry syrup
3 tea bags steeped with 8 grms cascade hops for 10 mins
Ritchies sparkling wine yeast.

Will add 1 litre apple juice and possibly1/4 litre of water after 5 days to make liquid up to approx 5 1/2 litres

OG approx 1.066
Could end up a powerful brew, but hopefully the addition of some extra juice and water will take the ABV down a bit :drunk:

Just bottled this up at around 8.40 %.
Had a taste at around day 15 and although not nasty it was a tad harsh, wife did not like it. Dry hopped it with 10 grams of Bramling Cross at day 15 and it has improved no end, even Mrs Chub liked it :D
If i do this one again i will add more water to drop the ABV down.

Cracked one open today. Nice and clear with a good red colour and reasonably carbed. A tad dry with a hint of fruit, think still more syrup could be added for more flavour. Certainly worth doing and would do another :D

Have been asked by my daughters partner to brew some more of this one up and must say that although i am not really a cider lover, it's actually not bad at all just a bit brutally strong :electric: .Once my beers have finished brewing i think i will stick another on the go

A bit more time would probably improve it, i've done one that was a bit on the harsh side but after 6 months it's lovely.

generally speaking beer is usually around 4-5% and cider is usually in the 6-8% range.

of course it all depends on various factors, stronger beers are possible, as are weaker ciders, just not that common.
drinking cider, keeping pace pint for pint with someone drinking beer, you'll definitely notice it more.

Global average carbon emissions - one ton per person per year.
Current emissions in UK – 9 tons per person per year!
Eight million tons of plastic dumped into the oceans. Every year!

Commercial cider is generally weaker - on a par with lager (5%) - but you get 6-8% from unaltered apple juice so I guess the point so this is the 'natural' ABV and to make it weaker you invariably lose some of the "appleness" and are tinkering with the 'pure' nature of cider made by squeezing apples! Whereas beer is whatever you want it to be.
