[Attempt] sweet cider

Hi guys. This is my attempt at a sweet fruit cider. I had been looking at toffee apple cider recipes then decided to kust go with the flow!

Ingredients:
3l asda aj
250g honey
250g honey + cinnamon
1 tin pear halves blended
1 tsp pectolase
1 tsp nutrient
Sachet apple cider yeast

Method:
Heat up honey in pan to make easier mixing, off heat add aj to mix. Cool then add nutrient, pecto and yeast.
In dj; 2 carton aj, blended pears then the contents from the pan.
Leave for 10 -15 mins then give a swirl around.
S.G was 1080 and i plan on stopping it at around 1010-1015 for a sweet medium.

What you guys think?

If my memory's any good then i havent forgot any other steps.

I would strongly recommend you let it ferment out to 1.000 and then back sweeten with non-fermentable sugar. This will avoid any possibility of bottle bombs and you can have it fizzy to. You might want to drop the Starting Gravity a bit as well.

Thanks for the reply. (Noob time) You obviously mean drop the S.G next time?? Lol and the whole idea of fermenting to 1.010 was just off a recipe i saw somewhere.
P.s i like the idea of no bottle bombs :)

If you want fizzy cider then you have to let it ferment dry ie 1.000, and back sweeten with an artifivisl sweetner. If you are happy with flat cider then you can stop the fermentation with potassium sorbate and bottle.

Well yes i think fizzy is the way forward. Thanks for your advice. I will start to have a look around for reccommend measurements for adding sweetener.
