I want to try strawberry and balsamic vinegar wine are there any pitfalls to this idea ?

vinegar is an off flavour of wine so might just taste like crap. brew a strawberry wine and add the vinegar in the glass?

Vinegar is the product of wine once the nasty aceto bacter have converted all the alcohol to acetic acid. Doesn't seem to work for me.

Also the only reason why balsamic vinegar and strawberries works is because the acidity of the vinegar is balanced by the sweetness of the strawberries. However when you ferment something the sweetness disappears as it is turned into alcohol.

So trying to achieve this probably isn't going to happen.

No reason why not apart from the perfectly sensible ones stated above... ;)

So by not being able to use actual balsamic vinegar - you need to find other things that give similar flavour notes without actually being balsamic vinegar... the question is "What on earth are they?"

Hm, on that logic would a sweeter wine not work?

Nah. The vinegar will just make it taste vile and given most balsamics are likely to be live would turn the whole lot to vinegar.

A sweeter wine with similar flavour notes to those of balsamic *might* work. Could you neutralise the acetic acid somehow maybe - a safe alkali of some kind? Then boil to kill the acetobacter? :hmm:

seems like a lot of hassle - why not stick to enjoying strawberries with balsamic vinegar on, and then also enjoy a wine.

Global average carbon emissions - one ton per person per year.
Current emissions in UK – 9 tons per person per year!
Eight million tons of plastic dumped into the oceans. Every year!
