elderberry wine

Hi all

Having done a (sort of!) elderflower wine a couple of months ago, I noticed that the fruits are now just about beginning to turn purple. Can anybody give an easy dj amount recipe for an elderberry wine.

It would be nice to use the berries from the same trees I got the flowers from.

4lb is usual, that may be before de-stalking (they come off the stalks easy after freezing)
Then again, last year I did 1kg elderberries 500g brambles and 250g raisins and it was great. That may have been 1kg after de-stalking

thanks for that.

While looking around, I found a few variations - most call for approx a kg of sugar per kg of berries. The difference seems to be whether you need grape juice or not. 2 videos on youtube did not use rgj but some recipes call for 250ml to 500ml.

So my plan is:

Fork the berries into a bucket (approx 1.5kg)
Pour over 1 litre of boiled water (with the sugar dissolved included)
Leave overnight or until the temperature is down to pitching levels
Pitch the yeast and nutrient
Leave for 2 to 3 days
Strain into a demijohn and top up with cooled boiled water and leave to ferment for approx 3 - 4 weeks.

I usually always do 1lb of blackberries to 2-3lbs of elders plus 1/2 lb of raisins. Damson makes a good combo as well, anything really to dilute out a abit of the tanin which can be quite high in some elders but it does vary from tree to tree and year to year in my experience.

Yeh, the sugar in the berries is negligible, so you want about a kilo per gallon to get 12ish %
kilo of sugar per gallon, not per kilo of berries though

If you pick the flowers there won't be any berries, you can't have both.

I wrote an elderberry wine guide here but haven't made a straight elderberry for a few years now, I prefer a mix of elderberry and blackberry, plus damsons or other red fruits.
