Gooseberry Wine Recipe

I have a source for about 10 kg of unwanted gooseberries. Which by my reckoning could be made into 25lt of Gooseberry wine. I haven't made Gooseberry wine before, but figured the following should do it. But suggestions gratefully received.

25lt Brew

10kg Goosberries
5lt WGJ
4 kg Sugar
5 tsp pectolase
5 tsp tannin
5 tsp Nutrient
1 CT

Mash the gooseberries with 2lt water and add 1 CT - Leave to sit - 4 days.
Strain and add to FV with WGJ and sugar - Top up to 25 lt
Add yeast - Probably Lalvin D47 to bring out the fruitiness.
Working on about 11% sugar content the above should come out at around 12% ABV

The addition of WGJ should give it a bit of vinosity and help to dilute the tartness of the gooseberries. Then leave to mature for about 6 months.

Thoughts anyone?

CJJB doesn't mention adding tannin. Maybe you might want to go easy on that.
OTOH, he also has more sugar with his red goosegog than with his green goosegog, which seems arse about face to me, but hey
Your sugars look about where he has his red. Maybe look up goosegogs on Moley's list and do a sanity check on the sugar, or get a gravity reading before the last few hundred gm go in

I used the fruit list I have and USDA which gives a 11% figure for gooseberries. Tannin I'm not sure about, but I wouldn't expect much with green gooseberries. Once the juice gets extracted and strained I can check the brix level before I add the sugar. That will give me a more exact reading.

I have a kg of goosberrys and will be putting a scaled down one of these on in the next couple of days. I need to get to the homebrew shop to get the basics first though!

Mashed the 1kg of gooseberrys and added 200ml of water and 1/3 of a ct tablet.
Will leave it for a few days. Then I am going to add a small bottle (220g) of wilkos White Grape Concentrate.
Anyone got any ideas how much sugar to add? As I am down scaling the recipe I am guessing 400g
Will I need to add nutrient? The White Grape Concentrate claims it helps yeast like nutrient.

Sorry if I'm hijacking your thread Bob....

Just tasted this today and its not good..... but should get better with time. Going to stabilize and bottle in the next few days.

Going to get a goosegog wine on the go after payday (going to spend it all in the Hop and Grape!) Got 3lb of goosegogs off my dad's bushes and planning to put elderflowers in too as my mam recently stewed a load of goosegogs with elderflower heads and they tasted delicious!

If you can get the gooseberries soon I'd go for a gooseberry and elderflower wine - it can be absolutely stunning.
