Plum 2011

Latest in the "check what they turned out like" selection from the left-to-age rack was a plum from 2011
Gorgeous. So here's the recipe.

4lbs plums halved and stoned; 75g raisins; crushed campden tablet; 5g root ginger, thinly sliced; 2 cloves; 1/4tsp citric; 1/4tsp tartaric; 1/2lb sugar
Around 1/2 gallon boiling water, covered and left for 5hrs; 1/2 gallon cold water, 2.5g pectolase
Covered and left 3 days
Strained, brought to boil (just), poured over 2lb sugar
Gervin GV5 yeast + 1tsp nutrient

Needed finings

Not sure exactly what species of plum, but yellow.

I assume the ginger and cloves are not a normal addition to wines / plum wine? Can you taste them much in the finished drink or do they just add a depth of flavor?

Spices turn up in a lot of country wine recipes, particularly old ones. You can taste them, but you might not be able to identify them unless thinking hard about it or being told.
