Competition 1st place Winner 2014

Just thought I would post my winning wine recipe if anyone is interested. This took 1st prize in the white/blush category and was a nice fruity medium sweet wine, scoring 47 out of 50. While I was pleased with the result, it was supposed to be a dry wine, so it was a happy accident. :lol: I am going to try this again to see if I can re create it.

Pineapple, Guava & Lime
Date started: 25/2/14
Racked & Stabilised: 23/3/14
Bottled: 2/5/14

Recipe Volume 25 lt

Aldi White Grape Juice 6 lt
Cracker Pineapple, Guava & Lime 4 lt
Zest & Juice 6 oranges
Granulated Sugar 4 Kg
Total Sugar 5342
Sugar per Lt 213.68
SG 1.084
FG 1.000
Starting PH 3.5
5 Tanin
5 Pectolase
5 Vit B (nutrient)
Youngs Bordeaux White yeast
Fermented at around 18-20c

If you like a medium wine give it a try. My MIL came round a week before TST to decide on what to enter, and she picked this one as her favorite. Came out a blush colour.

Bottled:
Galaxy Pale Ale, Woodfordes Wherry, Bella Brew Pale Ale, Strawberry and vanilla Pale Ale, Mixed fruits cider, Elderflower and grapefruit fizz.

Maturing:
Rhubarb Wine, WOW rose', Elderberry wine, Mixed berries wine, Elderflower and grapefruit wine, Elderberry wine.

Next Up:
German Pilsner, Guinness Clone, Chateau De Roi selection kit, Strawberry and lime cider.

I gave her my 1st place rosette. While we were away she fell and broke her knee, so it cheered her up a bit.

Thanks for the recipe Bob. I am just about to make up a 20ltr batch of this. By the way you recommended that I should add some grapefruit to a white wine that I made recently, I didn't! I then made another with the the grapefruit and it was much better (I thought that it would be too acidic for my taste but it wasn't)
Anyway Bob, I need a name for this to put on my log, what did you call it? (Knee breaker, winner, MILfave or something else)

:lol: I haven't given it a name other than rather unoriginally Pineapple, Guava & Lime Wine. But Knee Breaker sounds rather apt. :lol: She will have a laugh at that one.

I have just bottled 21 ltrs of this tonight. Bob, I salute you. No wonder it won first place, it is fantastic.

Just finished a bottle of this with some friends (so two months in the bottle) and they wouldn't believe that it was home made, no matter what I said! :shock:

Glad they liked it. I've just made another batch. Just goes to show you can make decent wine from supermarket juice. :lol:

I use a Youngs type screw top 25/30lt FV. And then rack to a better bottle type pet to clear.
