Rhubarb cider?

Postby Rolfster » Fri Jun 03, 2016 19:19

Hi all.
I got given some huge sticks of rhubarb today at work. I thought I could use then to make a nice tart rhubarb cider...... although I'm thinking turbo cider!
Anyone got a recipe?
I'm thinking...
2kg rhubarb (blended)
10 liters of nice apple juice (well aldi's)
5 teabags
Pectin
Cider yeast.

Thoughts would be gratefully received!
Cheers R

Rhubarb is quite tart, so you might want to sweeten it a little. Or even make a Rhubarb syrup and mix it with the cider in your glass.

How long should I leave it on the rhubarb pulp? With 2kg be enough rhubarb to get any flavour?

I suspect that will be enough. Depends how rhubarby you want it. You don't have to peel the rhubarb cos you're not going to eat it.

I have a rhubarb wine recipe in a book (never made it) which requires 2kg rhubarb for a gallon of wine.

Never enough time....

Would wine yeast work OK with this?
Otherwise I need to buy some!

I've just put this on.
It's at 1.044, with 10 liters of juice and 500ml of strong tea.
Thinking about putting some acid in it... malic and citric.
In looking for it I found my pot of tannin!

So I has this going in the cupboard in the spare room for a bit. I was at work for over 24 hours when I finally got round to checking it the temperature next to the fv was 24 degrees! So I moved it to the cellar head which is at 20 and on a concrete floor.
I put the rhubarb in a pan with some enzyme to extract the juice last night and today mashed it a few times, before squeezing the juice out of the pulp and adding it to the fv. I had 1.7kg of rhubarb, I'm not sure how much juice there was or how much sugar it will add for the yeasties!

Tried this today, it's very dry. My dad liked it, my mum screwed her face up.
Got a reading of 1.004 so I think it's still going. I moved it into a clean fv and will leave it alone for a couple of months. I'm probably going to add a little sweetener to it, but not lots. I will test it before bottling and figure out what I'm going to do.

It was still at 1.004 when I bottled it tonight.
I primed lightly (half a teaspoon for the 500ml bottles and 10g for my 2 liter bottles.
I got 3 big bottles and 10 little ones.

It tasted ok as well!
I didn't bother back sweetening, just going to do that in the glass for people who want a sweet drink.
