I started this kit on 15/4/15. The kit makes 23 lt of wine. I was a bit surprised that the yeast was Lalvin EC1118, but pitched it anyway. After no fermentation after 24 hours I decided I would pitch a Youngs Red Burgundy. I'm not sure which yeast took over but it's fermenting like a train now. The kit like all Kenridge Classics it comes with about 16lt of juice, 2 packets of oak saw dust, bentonite, yeast - EC1118 which is a Lalvin universal yeast, pot sorb, pot met, a good portion of kieselsol and chitosan finings, and enough labels to bottle 30 bottles. The instructions say to secondary this after about 10 days, no doubt to get it off the oak. But as I like oak I plan to leave this about a month and not bother with the secondary stage. We will see how it turns out.
