2016 sparkling elderflower

To celebrate the end of a record grape harvest, I opened a bottle of 2016 sparkling elderflower. Just a traditional recipe but with tartaric acid rather than lemon juice. The yeast sediment in the bottle (stored upright in standard screw-top wine bottle) had reduced to a very small amount and was undisturbed on opening. It has all the qualities of champagne plus the faint elderflower flavour.
If we ever get free of EU regulation, it could legitimately be called champagne!
