Elderflower experiment

Rather than follow the usual recipe for elderflower wine, I simply added the flowers to a winebuddy sauvignon blanc 30 bottle kit during fermentation. Initially I was unimpressed. There was no aroma and, after fermentation, the wine tasted rather bitter. However, after clearing and a few weeks maturation I was delighted to find the wine not only had a good aroma, but also tasted like a Chilean sauvignon blanc, without the slightest hint of elderflower! Definitely worth repeating next year.
