Yeast advice for sweetest cider possible?

Postby MrBoy » Fri Sep 07, 2018 23:51

I don't like adding sweetener but my wife isn't a fan of dry cider. How do people traditionally make sweeter cider without force carbonation and sweetener?

Are there yeasts that are good for this, or other tips? I want carbonated, sweet cider made naturally, basically. I'm not a purist completely.

Have a wander round www.cider.org.uk
There's a bit somewhere on "retaining natural sweetness", and keeving might be relevant, I forget

Best bet seems to be VERY careful pasteurisation. Bottle while still sweet, allow to carbonate, then pasteurise - it can be done at fairly low temperature if you leave it long enough. Always the chance of a bottle blowing up though.

Or a sodastream.

I believe that has a sweetener in it. OP was hoping to avoid artificial sweeteners

This might be a stupid idea but what about a low attenuating beer yeast like winsor?

It's not a stupid idea at all, if you can work out how to bottle in time to get carbonation but not bombs. Careful attention to the hydrometer might be enough.
