mixed fruit juice cider?

Postby HTH1975 » Tue Feb 16, 2016 23:12

I've got 4 litres of not-from concentrate fruit juice (26% Apple, 24% carrot juice, 21% orange juice, 7% pressed celery plus water makes up the remainder.

It tastes like tomato juice 'as is' (bloody awful), and was wondering if it's worth trying to make it into something alcoholic rather than chucking it.

Ideas welcome.

2016: 330L brewed (72 gallons, over 8 firkins)
2017: 105L brewed (need to update this figure)
Drinking: Landlord clone
Conditioning: ciders from 2016, hedgerow barrolo, 1914 Courage RIS (10%).

Celery cider? You'll need tattoos, a lumberjack shirt and a moustache like a Victorian strongman to drink that.

Tattoos - check
Lumberjack shirt - check
Moustache - will a beard suffice?

This is really just for the craik - could add some apple juice (got a juicer) to bulk it out

Well its all fermentable so I'd be inclined to give it a go. Make it up, check the SG then add sugar to bring it up to wine strength 11.5% ish then pitch a wine yeast. should work ok.

Hop Tea - how to

Puppy Slacko 5.9.3 Linux user see HERE for details.

That was my way of thinking - why not.

As it tastes like tomato-juice, I'm thinking that getting it tasting acceptable prior to fermentation is pretty important - gonna try adding some apply juice, fresh cooking apples to bitter the juice a bit and also fresh ginger for a kick.

I've only got lager yeast or Gervin here, or some harvested kölsch yeast (could give some extra- fruity notes).

Could maybe even boil say 25% of the liquor with some hops for aroma.

It's got a massive potential to be horrendous, but it's a challenge, ha ha.

Beer wort doesn't exactly taste that great so I'd be tempted to see what happens totally unadulterated, make a mixed-juice TC rather than a wine. Does it give you the sugar content?

Also, it sounds foul - why on earth did you buy 4L of the stuff?!

For the cost of simply some yeast I'd say why not... ferment and forget in a DJ, then seal off and stick in a cupboard for a year!

Sorry I didn't mean to be facetious. It is known that using tomatoes in wine is really rank. I think Moley did a piece on the old forum about it. Every time someone does it it ends in a car crash. Unfortunately they don't like me over there so I can't check the threads.
