Autumn Wine 2014

I rarely produce wine so thought I'd do a quick post about it.

This is a wine we make every year from foraged autumn fruits (elderberry, blackberry, damson.) I used 4lb fruit in a gallon, mashed together with a strong wine yeast (port style.) I added 750g sugar, fermented for a while, then began to feed the wine a sugar solution until it died and would no longer ferment. Naturally I don't know how strong this is, but it's a little sweet too.

Taste is awesome, full of rich dark fruits like a sloe gin. It's still pretty hot, so I'm going to put it away for a while longer, and probably crack one open on my birthday. It managed to survive a dried out airlock when i moved house for god knows how long!

Looks very nice, Rob! In my youth (when I had time but no money!) I spent many hours collecting the free bounty of autumn berries for exactly this purpose, and also used a port or desert wine yeast to ferment them. Happy days.
